Interpretive Summary:

Technical Abstract: Research at the National Center for Agricultural Utilization Research, ARS, USDA in Peoria, IL, has led to the development of a novel, patented technology designated as Fantesk**TM. Fantesk is a composite material that is prepared by co-jet cooking oil, starch, and water. The process produces a very stable dispersed emulsion of oil droplets encapsulated in starch that contains up to 50% by weight of oil. The material can be drum dried and reduced to a dry, non-oily powder. This powder can be re-suspended in water to produce a stable dispersion, resembling the original material obtained from the jet cooker. This dispersion acts as an emulsifier for lipid materials. Fantesk is currently being evaluated for numerous commercial applications including low-fat foods (dairy and meats), drug-delivery systems, lubrication, seed coatings, wound dressings, and personal care products. These evaluations are being carried out in cooperation with various industrial partners through Cooperative Research and Development Agreements. Continued commercialization of Fantesk technology will create new market opportunities for growers, processors, and manufacturers and provide new products for the U.S. consumer.
