Interpretive Summary:

Technical Abstract: Restructured fruit products include all foods manufactured primarily from fruit (puree, syrups, pieces) to which other ingredients (gelling agents) have been added to form a final product with a structure different from its original form. The production of value-added restructured fruit products can not only increase fruit utilization in the United States, but can also improve the U.S. position in world markets. We are currently applying knowledge from food, confectionery and polymer science to form value-added fruit pieces. These fruit pieces could then be eaten alone as snack items or added to baked, frozen, or canned foods. Extrusion and molding technologies are being investigated as means for producing restructured fruit products.
