Interpretive Summary:

Technical Abstract: Fantesk**TM is prepared by jet cooking oil, water, and starch. The product is a stable gel. It can contain up to 50% oil. The oil is encapsulated in droplets of 1-10 um in diameter in this composite and do not coalesce. This gel can be dried to a film and reduced to a dry, non-oily powder. This powder can be resuspended in water to produce a stable gel. It is a multipurpose carrying agent and can be used in various applications. It is cheap and Generally Regarded as Safe (GRAS). In food applications, it gives a satisfying mouth feel at a fraction of the amount of fat used in conventional ways to prepare sausages, hamburgers, ice creams. It can be used in transporting pharmaceuticals. It can be used as a carrying agent for essential oils, tocopherols, carotenes, and pigments in cosmetic formulations. The adhesive film forming characteristics of Fantesk**TM makes it possible to be used in film coatings for agricultural seed and seedlings. These film coatings could carry oil-based herbicides and pesticides targeted to the seed as well as hormones, growth regulators, biologicals, and nutrients. Fantesk**TM also acts as an environmentally friendly emulsifier for lipid materials which can be blended into Fantesk**TM at room temperature to form stable emulsions. Thus, heat-sensitive oils, nutraceuticals, flavoring agents, and drugs can be encapsulated. This paper deals with the formulation of these emulsions for applications in foods, cosmetics, lubricants, and pharmaceuticals.
