Interpretive Summary:

Technical Abstract: Mannitol, a naturally occurring polyol, is widely used in the food, pharmaceutical, medicine, and chemical industry. The production of mannitol by fermentation has become attractive because of problems associated with its production by chemical methods. We selected Lactobacillus intermedius NRRL B-3693 as a good producer of mannitol after screening cultures from the ARS Culture Collection. In this presentation, we describe the development of an industrial process for the production and recovery of mannitol. Conditions for the rapid accumulation of high concentrations of mannitol using inexpensive raw materials in a relatively simple fermentation protocol will be described. A recovery process resulting in mannitol of high purity will also be presented.
