Technical Abstract: This book chapter describes current applications of irradiation on fresh fruits and vegetables. Major applications of irradiation around the world include disinfestation of fresh fruits to eliminate pests and reduction of tuber crop losses by inhibiting sprouting. In recent years, a number of irradiated tropical fruits have been shipped and distributed in the United States market. However, there is little application on fresh vegetables in the U.S. Considerations and challenges for commercialization of the technology in the U. S. are discussed. Topics covered include types of irradiation, dose mapping, microbial safety and quality of irradiated produce, consumer acceptance, labeling requirements, regulatory approval, packaging materials and logistics.
