Technical Abstract: This publication is the preface for the book The Yeasts, A Taxonomic Study, 4th edition, edited by C. P. Kurtzman and J. W. Fell. The preface outlines the coverage in this book which treats the taxonomy and classification of yeasts. Species are described from morphological, physiological and molecular characteristics. There are 38 contributors to this book which provides descriptions and discussions for over 700 species. Yeasts are key microorganisms in biotechnology and are used in baking, brewing, and for the production of vitamins, organic acids, enzymes and pharmaceuticals. In addition, some yeasts are pathogenic to humans, animals and plants.
