Technical Abstract: This book chapter provides an overview of efforts to enhance the content and fatty acid composition of vegetable oils through biotechnological and plant breeding approaches. The underlying biochemical and genetic basis for this research is also described. Technical and commercial successes from this work are highlighted, and the likely direction of future research in the area of metabolic engineering of seed oil content and composition is discussed. It is anticipated that this book chapter will provide educational information for graduate students in the field of plant biotechnology and will be useful for researchers and plant breeders who are engaged in the improvement of oilseed crops for food, feed, and industrial applications.
