Interpretive Summary: The introductory chapter to Molecular Detection of Foodborne Pathogens gives an up-to-date accounting of current methods and current targets for the detection of foodborne pathogenic viruses, bacteria, fungi, protozoa, and helminths. Techniques of PCR are reviewed as well as classes of targets that are detected for the different types of organisms encountered in foods.
