Technical Abstract: Nutrition labels on cereal products must comply with the Nutritional Labeling and Education Act (NLEA). Therefore, accurate and rapid methods are required for the measurement of dietary fiber. The current work assesses the application of NIR techniques for the measurement of dietary fiber. Total dietary fiber content of dry milled breakfast cereals, crackers, brans, and flours was measured in the laboratory by the AOAC enzymatic-gravimetric procedure (AOAC, 991.43). Dietary fiber values ranged from <1 to 52%. The milled cereal samples (n=66) were scanned using an NIRSystems 6500 monochromator and ISI software. A dietary fiber calibration was obtained using partial least squares regression. The standard error of cross validation was 1.67% with R2 = 0.98. Independent samples (n=24) were analyzed in the laboratory and scanned by NIR for equation validation. The standard error of prediction for the validation set was 1.57% with R2 = 0.99. Suitably calibrated, NIR represents a rapid and accurate method of measuring total dietary fiber in cereal products.
