Interpretive Summary:

Technical Abstract: Starch was modified in aqueous alkaline conditions with alkenyl succinic anhydride. Different degree of substitution (DS) products were obtained by varying the starch to anhydride ratio. The products were enzymatically degraded to different extents. The resulting products were characterized for their viscosity, molecular weight and reducing sugar content. All of these results were interpreted with respect to their emulsifying activity with food oils.
