Mission:

This research unit has two related missions: 1) To evaluate quality of softwheat breeding lines and cultivars from the Eastern United States to ensure maintenance and/or improvement of milling and baking quality, and 2) to conduct research in the physics and chemistry of wheat and flour, with particular reference to quality and to development of new and improved tests for measuring and predicting quality. Both missions require close cooperation with breeders and with the milling and baking industries.
