Dr. Kervin Evans is a research physical scientist with the USDA Agriculture Research Service since 2003. Dr. Evans received his B.S. in Physics from Tougaloo College, and his M.S. and Ph.D. (both in physics) from the University of Alabama-Birmingham where he studied spectroscopic (fluorescence, IR, Raman, and NMR) techniques. Dr. Evans furthered his career by studying membrane biophysics and lipid chemistry at the University of North Carolina and studying single molecular detection at Sandia National Laboratories. Currently, Dr. Evans focuses his research efforts on developing innovative lipid and biopolymer-based encapsulation systems for delivering, preserving, or promoting the activity of bioactive ingredients. He also characterizes these encapsulation systems and other biomaterial for their physical properties (i.e. thermal behavior, UV-absorbing capability, antioxidant properties, micro- and nano-structural organization, corrosion inhibition, ability to entrap and release contents, etc) using physical methods (e.g. fluorescence spectroscopy, atomic force microscopy, quartz crystal microbalance with dissipation monitoring, UV-Vis spectroscopy, scanning & titration calorimetry, particle size & zeta potential analysis, etc).
