Objective:
1. Development and validation of predictive models for growth of high-priority pathogens in fresh produce and edible fungi. 2. Dynamic simulation and probabilistic modeling of growth of foodborne pathogens in fresh produce and edible fungi.

Approach:
Experiments and data analysis on the growth and death of foodborne pathogens, such as pathogenic Escherichia coli, Salmonella, and Listeria monocytogenes, in various types of fresh produce and edible fungi under static and dynamic storage conditions will be conducted in the Cooperator’s laboratory in collaboration with ARS. The generated data can be the basis for the “Integrated Pathogen Modeling Program (IPMP)” and for application in microbial shelf-life prediction and risk assessment.
