Objective:
This project will address key issues related to food safety hazards for aquaculture and seafood products including development of methods to detect, characterize and prevent these hazards, and development of technologies to produce safe and innovative aquaculture and seafood products. Objective 1 will focus on development of methods to detect and characterize food safety hazards in aquaculture and seafood products, Objective 2 will focus on the development of methods to prevent and control food safety hazards in aquaculture and seafood products and Objective 3 will focus on the development of post-processing technologies for the production of safe and functional products/ingredients for aquaculture and seafood products. These objectives will further the understanding of the food safety hazards and preventive controls for catfish, aquaculture and related food products; increase the diversity of healthy, nutritious aquaculture products available to consumers; and increase the profitability of seafood and aquaculture enterprises.
Approach:
Food safety issues relevant to the aquaculture and seafood industries in U.S. will be addressed through a multidisciplinary approached including improving detection and control of food safety hazards, and increasing the market value of aquaculture and seafood products through the development of innovative food processing methods. Research will be conducted at Mississippi State University and commercial seafood processing facilities. Research will address the following broad subject areas: detection, characterization and control of food safety hazards for aquaculture and seafood products; and development of safe and functional food ingredients from aquaculture and seafood products.
