Objective:
Evaluate Pacific Northwest (PNW) Soft White Wheat for end-use suitability for Mondelez and identify the protein characteristics of Eastern Soft Wheat desirable for processing and product quality.
Approach:
Perform complete milling and baking analysis of soft white spring and winter wheat varieties and andvanced breeding lines from two Washington locations. Determine HMW-GS Composition of Eastern Soft Wheat and its Association with Gluten Strength.
