Objective:
Objective 1. Investigate the health benefits of alternative proteins foods in the context of a healthy diet. [NP107 3C3, PSA, PS3B]
Objective 2. Develop and/or optimize research strategies for identifying seed composition trait combinations of various crop plants, that provide value for alternative protein use, along with competitive agronomic performance, product quality, and human nutrition acceptability and benefits. [NP 301, C1, PS1A, PS1B]
Objective 3. Evaluate and develop interventions to reduce the risks associated with mycotoxin contamination in plant-based food products. [NP108 C1, PS4]
Objective 4. Investigate and develop extraction technologies that lead to commercially viable production of plant-based renewable alternative proteins. The goal is to convert crops into value-added food and non-food products based upon their nutritional, physiochemical or chemical properties. [NP306 C1, PS1A, PS1B, PS1C, C2, PS2B]
