Objective:
To assess cooking time and canning quality in dry bean and cowpea samples grown in multiple locations in the US.
Approach:
Cooking time will be measured with a mattson cooker and canning quality will be conducted by canning samples in a retort and assessing quality with a trained sensory panel and objective texture and color measures.
