Objective:
1. Identify the genetic associations of the quality traits of eastern U.S. soft wheat and establish their genetic profiles. 2. Develop eastern U.S. soft wheat germplasms and varieties carrying unique functional and agronomic characteristics.

Approach:
Eastern U.S. soft wheat varieties producing grains of varying physical and compositional characteristics will be obtained from eastern soft wheat breeding programs and analyzed for milling and baking quality potentials and genetic backgrounds. Wheat flours of the selected genotypes will be tested for their suitability for making various conventional soft wheat products including pancakes, biscuits and crackers, and potential use for making tortillas and noodles. Both wheat grain and flour samples will be subjected to a comprehensive quality characterization to identify the traits crucial for the production of each soft wheat product and their genetic associations.
