Objective:
Characterize and introduce new genetic variation for soybean protein and meal composition from a mutant population, identify genetic loci underlying the soybean high protein mutant traits and develop soybean with improved composition profiles for plant-based protein foods, including high protein and modified carbohydrate and oil profiles.

Approach:
Soybean mutants with elevated protein will be evaluated for agronomic potential in small plot experiments (yield, maturity, plant architecture, canopy closure). Soybean mutants for protein, carbohydrate and fatty acid composition will be studied in small-scale food processing applications in the cooperator's pilot food processing facility to determine the best composition profiles for plant-based protein approaches.
