Objective:
Identify novel compounds associated with smoke taint in grapes, musts, and wine and potentially focus on the development of in process sensors able to detect the presence of smoke taint compounds.

Approach:
Pre-existing samples from California vineyards will be used to initiate the research project and new samples will be generated in controlled experimental conditions. Formation of the smoke taint compounds, detection limits, and sensory profile impacts will be related to origin of the samples, wine grape varieties, and types of fuels burnt in adjacent wildfires (i.e. types of vegetation or human made structures).
