Objective:
Consumption of meat is associated with increased risk of certain diseases, including cancer and heart disease. An existing challenge is accurately determining meat consumption within the populations. The three objectives for this research are 1) to establish a research consortium to investigate effects of consuming beef, red meat, and omnivorous dietary patterns on metabolomic and cardiometabolic responses of human research participants by pooling data from randomized controlled feeding studies, 2) to investigate metabolomic biomarkers predictive of habitual consumption of beef in the context of various dietary patterns and 3) to investigate phenotypic characteristics and metabolomic biomarkers that are predictive of cardiometabolic improvements induced by consuming beef in the context of various dietary patterns.

Approach:
ARS will establish a research consortium of leading nutrition experts to facilitate collaboration and create data resources to accelerate our understanding on the topic of protein sources, dietary patterns, and human health. Research consortium members will contribute relevant data from randomized controlled feeding studies to create a larger pooled data resource. Samples will be analyzed for untargeted metabolomics. Machine learning algorithms will be applied to the pooled dataset to identify markers of meat intake.
