Objective:
Evaluate Pacific Northwest soft white wheat varieties grown under diverse environments for milling and processing suitability and identify the protein characteristics of Eastern soft winter wheat desirable for processing and product quality.
Approach:
Perform complete milling and baking quality analysis of soft white spring and winter wheat varieties and advanced breeding lines from two Washington locations. Determine 1) grain physical and chemical characteristics including test weight, protein content and kernel hardness; 2) milling performances including flour yield, break flour yield and milling score; 3) flour biochemical properties including, flour ash and protein contents, water, sodium carbonate, sucrose and lactic acid solvent retention capacities, and sodium dodecyl sulfate sedimentation volume; and 4) baking quality by sugar-snap cookie baking test. Determine protein characteristics and HMW-GS composition of eastern soft winter wheat varieties, and their associations with gluten and dough strength.
