The Food and Drug Administration has established a regulatory level of 20 ppb of aflatoxin B1 (AFB1) in human food. This book chapter reviews the literature on the use of capillary electrophoresis for detection of aflatoxins and provides a specific protocol for the measurement of AFB1 in maize. |
