Publication Type: Abstract Only Publication Acceptance Date: 8/30/2001 Publication Date: N/A Citation: N/A Interpretive Summary: Technical Abstract: The exact chemical composition of both the isoflavones and saponins found in processed products prepared from soybeans have been determined, but reproducible and accurate analytical methodology for the quantification of these compounds relies on the availability of pure standards and proper interpretation of the spectra. We have purified milligram to gram quantities of the three isoflavone glycosides and five "group B" saponin lycosides, as determined by LC-MS and NMR, from concentrated processing products produced from soy. These have been used to develop efficient UV-spectrophotometric HPLC methods to determine the percent weights of the isoflavones and the group B saponins in various processed soy products. |
