Interpretive Summary:

Technical Abstract: Fantesk**TM is a stable dispersion of a jet-cooked starch slurry-oil mixture. The jet cooked material can be air- or drum-dried. Jet cooking and shear of the mixture liquefies the starch and lowers its MW. Various oils and fats and different starches can be used to produce Fantesk. Fantesk is a cheap, natural, stable dispersion of oil, water, and starch, which makes it economical and environmentally friendly. Up to 50% lipids or oils can be blended with starch slurry prior to jet cooking. Some important characteristics of Fantesk are emulsion stability, and the fact that dry product can be easily rehydrated, a high concentration soft gel can be formed and becomes pourable when heated, and it can be used for flavor encapsulation and can improve freeze-thaw stability of frozen products. There is a wide range of uses for Fantesk such as adhesives, fat replacers, an emulsifier, lubricants, cosmetics, seed coating, and drug delivery system.
