Interpretive Summary:

Technical Abstract: Potato tubers were found to have high levels of salicylic acid relative to most other plants. Salicylic acid is thought to be the active ingredient of aspirin in the human body. The high levels of SA in potato could potentially be a nutritionally desirable aspect of potato.
