Interpretive Summary:

Technical Abstract: Diets rich in whole grain foods appear to protect against several chronic diseases, including cardiovascular disease, stroke, type 2 diabetes mellitus, and certain cancers. The exact mechanism by which whole grains may play a causal role in health remains unknown. It may depend on the presence or interaction of several biologically-active nutrients found in whole-grains, such as dietary fiber, folate, potassium, magnesium, vitamin E, among other measured and unmeasured nutrients. In this review emphases will be placed on the observational data linking whole grain intake to risk of chronic diseases.
