Interpretive Summary: An overview of the NCAUR biocatalysis project is given in this short report. Our goal to create value-added products from plant lipids is explained using specific examples of new lipids such as SoyScreen. Our rational and experimental approaches are also explained. This article will allow industry researchers to become more familiar with ARS research into finding new uses for vegetable oils.

Technical Abstract: Research by the NCAUR projected titled "Biocatalytic Transformation of Plant Lipids in Unconventional Fluids" is devoted to creating higher-valued products from commodity vegetable oils. The approach taken is to use isolated enzymes that make specific modifications to plant lipids. Unconventional solvent systems are used, including ionic liquids and vegetable oil itself. The enzymes are immobilized, and in some cases the enzyme support is used to control the reaction electrochemically.
