Interpretive Summary:

Technical Abstract: Starch acetates and alkenylsuccinates of high water solubility were prepared by microwave heating of starch, acetic acid, acetic anhydride and, in some cases, octenyl-(OSA) or dodecenylsuccinic anhydride (DDSA). Degree of substitutions were 0.3-0.8 for acetate and 0.02-0.04 for OSA/DDSA. The surface tension of aqueous starch ester solutions as well as their interfacial tension with hexadecane were measured in order to determine their potential as stablilizers or emulsifiers. Surface and interfacial tensions generally decreased in the order unmodified dextrin - with greater than high amylose starch acetate - with greater than normal - with less than waxy starch acetate - greater than waxy starch acetate/OSA. Soybean oil/water mixtures were emulsified for - greater than 1 day by waxy starch acetate/OSA and acetate/DDSA but not starch acetates. An OSA starch prepared by conventional aqueous reaction had poor solubility and emulsification properties (large cream layer). This suggests that preparation method and OSA group distribution influence emulsification activities of modified starches.
