Interpretive Summary: Fruits and vegetables are rich sources of vitamins, minerals, and human wellness compounds. These compounds are often plant pigments or those used to ward off attack by insects or plant pathogens. Human wellness compounds can prevent or alleviate cancer and cardiovascular problems. Produce with known wellness compounds are presented in this paper.

Technical Abstract: Fruits and vegetable contain many compounds important in human health. These include the well known vitamins and minerals. The less well known nutraceutical compounds have become of increasing interest, as so many of these, especially plant pigments, appear to help prevent or alleviate aging diseases such as cancer and cardiovascular problems. In this paper, produce with known compounds are presented and sources of information on these and other areas of dietary information are given.
