Interpretive Summary:

Technical Abstract: Wheat markets and other end-users have begun to demand fast and reproducible methods and techniques for varietal identification. High-performance capillary electrophoresis (HPCE) was used to identify and characterize gliadins from the gluten protein extracts of selected Macedonian wheat varieties (Triticum aestivum, L). Gliadins were analyzed according to the free zone capillary electrophoresis (FZCE) method of Bean and Lookhart (2000). Electrophoregrams showing unequivocal separations of Macedonian wheat varieties will be presented. The analyses were performed within four minutes and indicate that HPCE can be used as a fast and reproducible method for wheat varietal identification.
