Citation: Lee, J., Durst, R., Wrolstad, R. 2005. Aoac official method 2005.02: total monomeric anthocyanin pigment content of fruit juices, beverages, natural colorants, and wines by the pH differential method. In: Horowitz, H. editor. Official methods of analysis of AOAC International. 18th edition. Washington D.C.:AOAC. 2005.02.

Interpretive Summary: Detailed step-by-step instructions on how to perform the pH differential method (method for determining the content of anthocyanin present) in samples.

Technical Abstract: Detailed protocol for performing the pH differential method, which is currently undergoing AOAC's official methods of analysis validation program. Once the collaborative study manuscript is approved, the method will be published in the AOAC International book of official methods of analysis . This method is applicable to the determination of monomeric anthocyanins in fruit juices, beverages, natural colorants, and wines within the range of 20-3000 mg/L as cyanidin-3-glucoside equivalents.
