Interpretive Summary: Technical Abstract: Current theories assume that dietary fiber may reduce colon cancer by adsorbing carcinogens and transporting them out of the body. The adsorption of heterocyclic aromatic amines (HAAs) by lignified fiber was investigated by incubating artificially lignified maize cell walls (so called dehydrogenation polymer-cell wall (DHP-CW) complexes) with four of the most relevant HAAs under conditions simulating the small intestine. The DHP-CWs had varying, defined lignin contents and compositions, but the same polysaccharide-protein matrix. Quantification of HAAs was performed by HPLC-UV. These investigations showed that both lignin content and lignin composition influence the adsorption of HAAs. |
