Interpretive Summary:

Technical Abstract: Research areas such as the development of agricultural biocontrol formulations, drug delivery systems, and probiotic foods in which alginate beads containing immobilized cells are air dried could benefit from a drying model that is capable of describing the drying process to nearly 100% water mass loss. A review of the literature on the drying of gels or beads indicates that no simple model can be used to describe the entire drying process. Here, a model was developed to describe the drying of alginate beads. The model was tested with different values of M0, Rh, and alginate guluronate content. It was determined that the entire drying process can be described with one simple expression
