Technical Abstract: This presentation will cover the benefits and drawbacks of using edible coatings, the different materials used in edible fruit and vegetable coatings, and the advantages and disadvantages of each type of material. Data will be presented to illustrate how coatings can improve appearance and extend shelf life of fruits and vegetables and also how they can affect flavor.
