Metabolic profiling is being used to screen potatoes for genotypes with elevated amounts of vitamins and phytonutrients. Substantial differences in phytonutrients among different genotypes was observed for some phenolic compounds, including flavonols, differing in concentration by well over 10-fold. More modest differences were found in folate (Vitamin B9) with about a 3-fold difference found between high folate and low folate genotypes. Comparisons were also done between wild species and cultivars and marked differences were found, such as in glycoalkaloid composition. |
