Interpretive Summary: Technical Abstract: A broad range of approaches are applied to reduce mycotoxin contamination of agricultural commodities. These mycotoxins pose health risks to humans and animals, and negatively impact commodity values. The inherent fluorescence of several mycotoxins coupled with inclusion of complex interactions provides a means to improve detection. Fluorescence spectroscopic studies on the interactions of the mycotoxin zearalenone with several cyclodextrins and surfactants were carried out to probe structure-property relationships. Theoretical calculations and spectrofluorimetric studies suggest that zearalenone can interact with cyclodextrins in multiple modes and stabilization of the mycotoxin: cyclodextrin complex is associated with favorable binding interactions. Anionic, non-ionic, and cationic surfactants at concentrations above the critical micelle concentration provide an enhancement of the fluorescence detection of zearalenone under aqueous conditions. These materials provide a more general approach to improve mycotoxin detection. |
