Interpretive Summary: n/a

Technical Abstract: There is interest in enhancing the nutrient content (nutritional quality) of our food supply in order to help people attain the recommended daily allowances of various nutrients. Pea seeds are a good source of the sugars, starches and amino acids needed for energy and protein synthesis requirements in humans. Sugars, or low molecular weight carbohydrates (LMWC) in mature pea seed include simple sugars (glucose, fructose, sucrose, sorbitol) and raffinose family oligosacchardies (RFOs) (raffinose, stachyose, verbascose)The preliminary analysis of the USDA from the core collection based on 16 accessions indicates a wide range of low molecular weight carbohydrate concentrations expressed as µg/g fresh weigh were identified. In this subset of accessions the highest concentrations of LMWC were sucrose and stachyose which range from 9,294 to 42,493 and 0 to 26,674 µg/g fresh weigh, respectively.
