Technical Abstract: Imaging is an important component in basic research, product development and understanding structure/function relationships in agricultural commodities and products. An array of microscopes and techniques can be used illustrate the structure and microchemistry of diverse samples. Examples of the variety of imaging equipment available, and their use in different avenues of research will be presented.
