Technical Abstract: Light scattering technology has been increasingly used recently for food property, quality and safety assessment. However, so far no single book has been dedicated to the subject. While many books have been published on optical techniques for food and agriculture applications, few offer a comprehensive review of the fundamental principles, theories and modeling of light transfer in food and agricultural products. This book, for the first time, gives an overview of the principles, theories and modeling of light transfer in food and biological materials and a comprehensive review of the latest advances in light scattering technology in food and agricultural applications. Each chapter of the book is written by leading experts in their respective fields from around the world. The book is intended for graduate students, researchers and practitioners who are interested in learning the basic concepts, principles, and theories of light transfer and gaining in-depth knowledge of light scattering technology for measurement and characterization of food and agricultural products. It is hoped that the book will stimulate new interest to both incoming and veteran researchers and practitioners in exploring this exciting light scattering technology to address a broad range of issues in food property, quality and safety assessment.
