Interpretive Summary:

Technical Abstract: The enthalpy of fusion (Hf) for a number of symmetrical and asymmetrical triacylgylcerides as mixtures in soybean oil (TAGs) were determined by melting point data (MPD), differential scanning calorimetry (DSC), and effective carbon numbers (ECN). Pure triacylgylcerides were mixed with soybean oil and the MPD were used to calculate solubility by the Hildebrand Solubility. Hf was determined by a modification of the Clapeyron equation according to Hannewijk. DSC and Mettler dropping points were in good agreement with a correlation of r = 0.956. Hf was calculated by ECN as described by Timms. The TAG/soybean oil mixtures behave as ideal solutions since plots of 1/T x 10 -3 deg Kelvin vs. log concentration Mole % are linear. Hf was calculated by the equation Hf = 2.3 x 1.98 x slope of the melting point line in Kcal/mole or Kcal/mole/mol wt = cal/gr. A comparison of the methods showed that 12 TAGs were in agreement by 3 methods and 9 of the 22 agreed by 2 of the methods. Only 1 did not agree between any of the methods. Saturated TAGs (SSS, PPP) showed the best agreement for Hf and between MPD, DSC, and ECN.
