Interpretive Summary:

Technical Abstract: My program examines the plant secondary metabolites (i.e. phenolics) important for human health, and which impart the organoleptic properties that are quality indicators for fresh and processed foods. Consumer expectations such as appearance, taste, or texture influence their purchasing decisions; all are attributes that phenolics contribute towards. Thorough identification of phenolic compounds is key to discerning how cultivar selection, breeding strategies, environment, post-harvest conditions, and processing methods ultimately affect food quality. Highlights will be presented from my research on the elucidation and quantification of phenolics in grapes, other small fruits, culinary and medicinal herbs, consumer products (e.g. dietary supplements), and production improvements that aid phenolic retention. Discussion will include (a) how canopy, cover crop, and nutrient management alter metabolites in wine grapes; (b) winemaking conditions that influence wine structure; (c) characterizing cultivar variability in polyphenolics aiding enhanced germplasm selection in berries; (d) processing methods affecting efficiency of phenolic extraction in final products; and (e) utilizing phenolic profiles to detect adulteration.
