Interpretive Summary:

Technical Abstract: As anyone who prepares food knows, if too much salt is added to the pot, there is no way to remove it. If too little salt is added to the pot, adjustments can be made at the point of consumption. Unfortunately, for many people the latter is not an option. Recent estimates, which are remarkably similar those made about 25 years ago, indicate that 71% of the sodium we consume comes from food prepared outside the home and only 14% is inherent to food. Hence, within our current food environment many people have little recourse when it comes to the amount of sodium they consume.
