Technical Abstract: Appearance is an important quality attribute of fresh market potatoes. Red potatoes are one class of fresh market potatoes and consumers prefer red potatoes with a bright red, unblemished skin. In this presentation, we review ways that potato variety, the production environment, production practices and storage conditions influence the appearance of red potatoes.
