Interpretive Summary: A flavor wheel was developed for the different types of preharvest off-flavors that can be encountered in fish raised in recirculating aquaculture systems. This flavor wheel can be used by farmers and researchers to help identify the more objectionable types of off-flavors.

Technical Abstract: A variety of preharvest off-flavors can occur in fish raised in recirculating aquaculture systems (RAS). Studies involving the sensory evaluations of fillets of eight different fish species raised in RAS either commercially or at research facilities were performed using trained panelists in two research laboratories. A flavor wheel of the types/descriptors of off-flavors, along with general categories and degree of objectionabilities, that can occur in RAS-cultured fish was subsequently developed from the combined data as a reference guide for producers and researchers.
