Interpretive Summary:

Technical Abstract: Nowadays, agricultural products are sorted automatically by using various optical imaging techniques into quality classes according to parameters such as size, shape, color, ripeness, sugar content, acidity, etc. This review article examines a variety of machine vision techniques but focuses on exploring the potential of fluorescence imaging for the non-destructive assessment of agricultural product quality attributes. In this article, fluorescence concepts and methodology are discussed, then the application of fluorescence imaging to detect peel defects in a wide variety of citrus is provided as an example of the use of this type of imaging. Next, an overview of areas for future investigation of fluorescence imaging applications for quality assessment of agricultural products is discussed.
