Interpretive Summary:

Technical Abstract: The research conducted within the Hess Lab focuses on identifying and evaluating strategies to help Americans meet recommendations from the Dietary Guidelines for Americans (DGA). Recent studies have focused on developing nutritionally adequate vegetarian eating patterns for different life stages, including ultra-processed foods in DGA recommended healthy eating patterns, and defining a healthy Indigenous dietary pattern using foods native to the Great Northern Plains. Planned future work will continue to address research questions that address practicalities in the nutrition considerations of American consumers, including dietary cost, home food preservation, and preparation time, among others. This presentation will provide an overview of completed projects of the Hess Lab with a broad look at future directions as well.
