Interpretive Summary:

Technical Abstract: Ultra-processed foods (UPFs) is on the list of topics and questions to be considered by the 2025-2030 Dietary Guidelines for Americans Scientific Advisory Committee and, more broadly, is an emerging topic of high interest to the field of nutrition science. The absence of a clear definition for what constitutes an "ultra-processed" food complicates the inclusion of recommendations about UPFs in dietary guidance. This presentation provides a broad overview about federal dietary guidance, including the process to review scientific evidence to inform that guidance. It also discusses results of an emerging body of research on the intersection of nutrient-density and processing and the limitations of the NOVA categorization system for foods.
