H20 vapor loss was 250-1000 times greater from skinned tuber surfaces than from undamaged periderm at harvest. A technique (modified Halderson periderm shear tester) to objectively measure skin set has been developed and is being refined. The unit measured the torsional force required to shear the skin from a tuber. Russets generally develope good skin set more rapidly than did smooth-skinned varieties. Smooth, red-skinned varieties generally were slower at developing good skin set. The technique for measuring skin set proved reliable when carefully performed. |
