Interpretive Summary:

Technical Abstract: Escherichia coli O157:H7, Salmonella, Listeria monocytogenes, and Campylobacter jejuni are the foodborne pathogens in beef targeted for reduction by CDC by the year 2000. Herein research conducted in the three institutional sectors - government, academia, and private industry - is presented. Emphasis is placed on the recommendations of the USDA pathogen reduction focus groups and the studies conducted in the USDA-Agricultural Research Service (ARS) and in USDA-CSREES-funded laboratories. A research matrix summarizing major topics suggested by the USDA-Technical Advisory Group includes: prevalence studies, ecology and epidemiology, live animal production practices, feed management practices, pathogenicity, diagnostic tests and emerging pathogens in beef. Research efforts and mutual collaborations among federal, private industry and university laboratories have realized significant research gains.
